Harvest date: 2nd and 3rd week in October.

Winemaking process: The moment of harvesting is determined following sanitary control and oenological monitoring of the maturing grape process. Elaboration uses the traditional system with cold maceration of the first process for greater aromatic development of the future vine. Complete stalk removal and extraction to achieve wines with color and sufficient polyphenols for an excellent red wine. Temperature control in the second stage around 28-29ºC, run off at density 1010.
